Carb-Free Dinner: Stuffed Peppers

Remember how I am eating no carbs after 3 pm?

Well, I made something carb-free and delicious the other night for dinner. It looked a little something like this...


Stuffed Peppers

Ingredients:
1 lb ground beef
1 can rotel tomatoes
1 packet taco seasoning
3 bell peppers
1 cup of your favorite cheese (I used the mexican shredded cheese mixture)

Directions:
Brown ground beef in a skillet and drain any fat out of the pan. Add taco seasoning according to the packet directions. Add the can of rotel into the taco mixture and simmer for 5-10 minutes.

Cut bell peppers in half and de-seed them. Use aluminum foil to cover your pan and spray with Pam cooking spray so they don't stick and make a mess. Salt and pepper your bell peppers to taste. Put them in the oven on broil for 4-5 minutes. Take them out of the oven flip them over and broil for another 4-5 minutes. Add the ground beef mixture to each bell pepper half and top with cheese. Put them under the broiler for another 3-5 minutes or until the cheese is melted and bubbly.
